Game Day Eats!


We love to host and love to eat!
Here are some delicious easy eats that have all our friends asking for the recipe.
These are some of our favorites!


CHILI CHEESE DIP



1 package of cream cheese
1 can of 15 oz chili, no beans
1 cup of shredded sharp cheddar cheese
1 bag of tortilla chips

Mix cream cheese and chili together in a microwave-safe dish.  Cover the top with a layer of the cheddar cheese.  Microwave for about 5 minutes or until the cheese is melted to perfection. Serve with the chips!



TRADER JOE'S PINEAPPLE SALSA


This salsa is so good!  You gotta try it!



CLASSIC CLAM DIP



1 can of clams with juice
3/4 stick of butter
1 small onion chopped
1 cup of Ritz crackers (crumbled)
1/4 cup of Italian bread crumbs
pinch of garlic power
pinch of pepper
tbs. of Parmesan cheese
pinch of oregano

Preheat oven to 350 degrees.
In a bowl mix crumbled Ritz crackers, breadcrumbs, garlic power, pepper, Parmesan cheese, oregano and clams...don't forget the juice! 
In a separate bowl add onion and butter.  Microwave until butter is melted. 
Mix all together and place in an oven safe dish.  
Bake in oven for half an hour...the dip will bubble when it's ready!
Spread on a Ritz and enjoy!

*Dennis hates seafood but loves this dip!  There is a lot of flexibility with the seasoning of this recipe. Use what you have in your pantry...any type of cracker can be used, but Ritz is our favorite!  Add garlic power and pepper to taste.  We used Italian seasoning instead of oregano and Romano cheese...still tasted great!    



COCKTAIL MEATBALLS


3-5 lbs. of frozen cooked meatballs, we like Italian or homestyle
32 oz jar of grape jelly
2 12oz jars of chili sauce

In a large pot heat up the grape jelly and chili sauce. Add in the meatballs and simmer for about 45 minutes uncovered.  Stir frequently to make sure all the meatballs get covered and a chance to simmer in the sauce...after all, the secrets in the sauce!

LEEK SWISS DIP



1 package of Knorr leek soup mix
1/2 cup  of low fat mayo
1 16oz container of sour cream
1 cup of shredded Swiss cheese
1 bag of Frito's scoops


Preheat oven to 350 degrees.  
Mix all ingredients together in an oven safe dish.  
Bake in oven for half an hour or until the top is slightly brown!
Scoop away!

We rang in the New Year with a family tradition in Dennis' home with fondue and Chinese!



Since we hadn't been together for the entire month of December, we also celebrated Christmas and opened presents!!!
Big hits were the Soda Stream and our Sonic Care Toothbrushes!
Ironic, huh?
